Cashew Latte

Hello, Tuesday! Didn’t expect you to be so warm! For some reason, I’m experiencing a delayed case of the Mondays! Lame! With the temps reaching the high 90s, I needed something cold and so I whipped this guy up! A latte made with cashews, organic brown sugar, and some good old Colombian coffee.

When I tell you that this was an easy drink, I am not exaggerating. I had all the ingredients in my fridge and I essentially saved myself at least $5.

    2 tbsp. raw cashews
    1 tsp. organic brown sugar
    1 tsp. Colombian coffee diluted in 3/4 c. of hot water
    2 ice cubes

1. Soak cashews in hot coffee for about 5 minutes.

2. Blend all of the ingredients in a blended for 2-3 minutes.

3. Serve and enjoy!

The Iron Bowl

I love these little bowls, they remind me of a coconut shell but more than that, I love this smoothie bowl. Passion fruit yogurt, cacao powder, maple syrup, topped with my favorite toppings make for an absolute treat. I call this the Iron Bowl because of the Cacao-Yogurt connection, cacao is a great source of iron and the calcium in yogurt is a great partner to absorb the iron better. I topped it with raw cashews, coconut flakes, chia seeds and the little bit of banana that I had left.

The Iron Bowl

  • 1 Passion Fruit Yogurt
  • 2 tbsp. Cacao Powder
  • 1 tbsp. Maple Syrup
  • 1 tsp. Chia Seeds
  • 1 tsp. Coconut Flakes
  • Raw Cashews or your favorite nut
  • Banana
  1. Mix the yogurt, cacao powder and maple syrup together and place in bowl.
  2. Top with your favorite toppings.
  3. Enjoy!
